Lime kiln. We are in front of one of the lime kilns that were used until the 1950s to transform the limestone rock, so abundant in the area, into lime, heating the stone to temperatures above a thousand degrees Celsius for one or two weeks.

The kiln was turned on during the first half of August, and the main uses for the 50 tons of lime produced was to scald the raisin. Le escaldar consists of a delicate process made by authentic experts, on it, called escaladors.

Immersing the grapes for a few seconds in the water mixed with lime, the skin of the fruit is broken in just the right amount, and in this way, the time of exposure to the sun is reduced. The lime kiln also was very important for the economic development of El Poble Nou de Benitatxell.
